Shogoin daikon radish is one of Kyoto’s most iconic traditional vegetables, believed to have originated in the late Edo period in the Shogoin area. Known for its round, plump shape and soft texture that doesn’t fall apart when cooked, it also features a hint of natural sweetness. When dried, its fine texture transforms into a chewy and bouncy mouthfeel, while the reduced moisture intensifies its umami, adding depth to its elegant sweetness and creating a flavour distinct from fresh daikon.
